
Aubergine & hummus grills
Grilled aubergine slices topped with hummus en fresh herbs.
Ingrediënten

- 2zonnebloemolie2 eetlepel
- 3brood3 stuk
- 4hummus300 g
- 5walnoten100 g
- 6peterselie40 g
- 7Cherry tomatoes200 g
- 8LemonJuice of 1/2
- 9extra vergine olijfolieSplash

Lay the aubergine out in one layer on a large baking sheet. Brush sparingly with zonnebloemolie, then breng op smaak generously. grill for 15 mins, turning twice and brushing with olie tot the slices are softened and cooked through. ondertussen, whizz the brood into crumbs. voeg toe 2 tsp olie and whizz briefly again, to bedek.

Spread a couple of tsps of hummus on top of each snijd of aubergine. Tip the paneermeel onto a large plate, then press the hummus side of the aubergines into the crumbs to bedek. grill again, crumb-side up, for ongeveer 3 mins tot goudbruin.

schud door the walnoten, peterselie and cherrytomaatjes in a bowl, breng op smaak, then voeg toe the citroensap and olijfolie and schud door again. serveer the grills with the salad, a dollop more hummus and some pitta brood.
