
Beetroot pannenkoeken
Een Ukrainian dessert gemaakt met rode biet, melk en ahornsiroop.
Ingrediënten
- 1rode biet3 stuk
- 2Melk50 ml
- 3zelfrijzend bakmeel200 g
- 4Bakpoeder1 theelepel
- 5ahornsiroop2 eetlepel
- 6Vanille-extract0.5 theelepel
- 7Ei3 stuk
- 8Boter25 g
- 9Frozen Mixed Berries200 g
- 10Blackcurrant Jam2 eetlepel
- 11Greek yogurt100 g

step 1 doe 3 rode bieten in a jug with 50 ml melk and mix with a stick blender tot glad. giet into a bowl with the rust of the pancake ingredients and klop tot glad and vibrant purple.

doe a small knob of 25 g boter in a large non-stick frying pan and verhit over a medium-low verhit tot melted and foamy. Now create 3 or 4 pancakes each made from 2 tbsp of the batter. kook for 2-3 mins then flip over and kook for a further minuut tot gaar. Repeat with any remaining batter. verwarm de oven voor op lowest setting and houd the pancakes warm in there tot needed.

serveer with your favourite pancake toppings or maak a simple compote by simmering frozen berries in with 1 tbsp 2 eetlepels blackcurrant jam tot bubbling and syrupy (ongeveer 5-10 mins). In a small bowl roer together the remaining jam and the yoghurt. Stack the cooked pancakes with the yoghurt and giet the warm berry compote over the top.
