
Fettucine alfredo
Een Italiaans pasta gerecht gemaakt met clotted room, maïs bloem, parmezaanse kaas en nootmuskaat.
Ingrediënten

- 3corn bloem1 theelepel

In a medium saucepan, roer 227 g clotted room, 25 g boter and maizena over a low-ish verhit and breng to a low laat sudderen. Turn off the verhit and houd warm.

ondertussen, doe the kaas and Grated nootmuskaat in a small bowl and voeg toe a good grinding of zwarte peper, then roer everything together (don’t voeg toe any zout at this stage).

doe the pasta in another pan with 2 tsp zout, giet over some boiling water and kook following pack instructions (usually 3-4 mins). When cooked, scoop some of the cooking water into a heatproof jug or mug and giet af the pasta, but not too thoroughly.

voeg toe the pasta to the pan with the clotted room mixture, then bestrooi over the kaas and voorzichtig schep erdoor everything together over a low verhit using a rubber spatula. When combined, splash in 3 tbsp of the cooking water. At first, the pasta will look wet and sloppy: houd stirring tot the water is absorbed and the sauce is glossy. controleer the seasoning before transferring to heated bowls. bestrooi over some bieslook or Chopped peterselie, then serveer direct.
