
Gebakken zalm met fennel & tomatoes
Oven-baked zalm with venkel, cherrytomaatjes en herbs.
Ingrediënten

- 2peterselie2 eetlepel
- 3LemonJuice of 1
- 4Cherry tomatoes175 g
- 5Olive oil1 eetlepel
- 6zalm350 g
- 7zwarte olijvento serve

verwarm de oven voor op 180C/fan 160C/gas 4. Trim the fronds from the venkel and zet opzij. Cut the venkel bulbs in half, then cut each half into 3 wedges. kook in boiling salted water for 10 mins, then giet af goed. hak the venkel fronds roughly, then meng with the peterselie and citroen zest.

Spread the drained venkel over a shallow ovenproof dish, then voeg toe the tomaten. Drizzle with olijfolie, then bak for 10 mins. Nestle the zalm among the veg, bestrooi with citroensap, then bak 15 mins more tot the fish is just cooked. Scatter over the peterselie and serveer.
