
Kip Enchilada Casserole
Een Mexicaans kip gerecht gemaakt met enchilada sauce, shredded monterey jack kaas, maïs tortillas en kip breasts.
Ingrediënten

Cut each kipfilet in ongeveer 3 pieces, so that it cooks faster and doe it in a small pot. giet 397 g enchilada sauce over it and kook covered on low to middelhoog vuur tot kip is cooked through, ongeveer 20 minuten. No water is needed, the kip will kook in the Enchilada sauce. maak sure you roer af en toe so that it doesn't stick to the bottom.

verwijder kip from the pot and shred with two forks.

verwarm de oven voor op 375 F degrees.

Start layering the casserole. Start with ongeveer ¼ cup of the leftover Enchilada sauce over the bottom of a baking dish. I used a longer baking dish, so that I can doe 6 maïs tortilla's across. leg 2 tortillas on the bottom, top with ⅓ of the kip and ⅓ of the remaining sauce. bestrooi with ⅓ of the kaas and repeat starting with 2 more tortillas, then kip, sauce, kaas. Repeat with last layer with the remaining ingredients, tortillas, kip, sauce and kaas.

bak for 20 to 30 minuten uncovered, tot bubbly and kaas has melted and started to bak bruin on top.
