
Aubergine couscous salad
A Turkish vegetarian made with aubergine, couscous and vegetable stock.
Ingredients

- 3Couscous140 g
- 4Vegetable stock225 g
- 5Cherry tomatoes200 g

- 7Goats Cheese100 g
- 8LemonJuice of 1/2

step 1 Heat grill to high. Put the aubergine 1 eggplant on a baking sheet, brush with oil and season. Grill for about 15 mins, turning and brushing with more oil halfway, until browned and softened.

Meanwhile, tip 140 g of couscous into a large bowl, pour over the stock, then cover and leave for 10 mins. Mix the tomatoes, Handful mint, goat’s cheese and remaining oil together. Fluff the couscous up with a fork, then stir in the aubergines, tomato mixture and Juice of 1/2 lemon juice.
