
Bang bang prawn salad
A Vietnamese seafood made with rice noodles, peanut butter and coconut milk.
Ingredients

- 2Peanut Butter3 tbsp
- 3Coconut Milk4 tbsp
- 4sweet chilli sauce3 tbsp
- 5Spring Onions3 piece
- 6Cucumber1 piece
- 7Bean Sprouts300 g
- 8Prawns200 g
Method

step 1 Cook the noodles following pack instructions, then rinse under cold water and drain thoroughly. In a small saucepan melt together 3 tbsp of peanut butter, 4 tbsp of coconut milk, 3 tbsp of sweet chilli sauce and half 3 spring onions, adding 1-2 tbsp of water to loosen the mixture to a drizzling consistency.

Mix the noodles, 1 cucumber and beansprouts in a serving dish. Top with 200 g of prawns, drizzle over the peanut sauce and scatter over the remaining spring onions.
