
Beetroot latkes
A Ukrainian vegetarian made with rapeseed oil, greek yogurt and mint.
Ingredients
- 1Rapeseed Oil1 tbsp
- 2Greek yogurt4 tbsp
- 3Mint1/2 bag
- 4Arugula150 g
- 5Cherry tomatoes130 g
- 6Beetroot400 g
- 7Egg1 beaten
- 8Flour1 tbsp
- 9Garlic1 piece
- 10Caraway Seed1 tsp
- 11Ground Cumin0.5 tsp
- 12LemonZest of 1
Method

step 1 Heat the oven to 180C/160C fan/gas 4. Make the latkes by combining all of the ingredients.

Heat the oil in a large non-stick pan. Spoon in the mixture to make six round latkes. Fry for 4-5 mins on each side, then transfer to a baking sheet and bake for 10 mins.

Combine the yogurt and 1/2 bag mint in a small bowl. Toss the salad leaves and tomatoes together, then serve the latkes with the mint yogurt and salad.
