
Easy Pea Soup
A pea soup recipe from my grandmother. Easy, quick and absolutely delicious!
Ingredients

- 2Onion1 piece
- 3Butter50 g
- 4Split peas150 g
- 5Bouillon cube3 piece
- 6Water2 l
- 7Salt to taste
- 8Pepper to taste
- 9Thyme1 pinch
Method
- 1
Chop 2 leeks and 1 onion into pieces.

Add 50 g of butter into a large pot and bring up to heat.

At medium heat, add the leek and onion into the pot and sauté for about 5 minutes.

Add 150 g of split peas, 3 bouillon cubes (vegetable or chicken) and 2 l of water to the pot. Bring to a boil and simmer for 30 minutes.

The peas will want to float to the bottom during the first half of cook time. Stir the bottom occasionally to prevent them from burning.

After 30 minutes, take out an immersion blender and blend the soup until all chunks are gone.

Season with salt to taste, pepper to taste and 1 pinch of thyme.
