
Easy Spanish chicken
A Spanish chicken dish made with extra virgin olive oil, chorizo, red pepper and yellow pepper.
Ingredients
- 1Extra Virgin Olive Oil2 tbsp
- 2Onion1 piece
- 3Chorizo150 g
- 4Red Pepper1 piece
- 5Yellow Pepper1 piece
- 6sweet smoked paprika1 tsp
- 7Garlic4 piece
- 8Tinned Tomatos400 g
- 9Green Olives150 g
- 10Butter Beans400 g
- 11Chicken Thighs8 piece
- 12Parsley1 Handfull
Method

step 1 Heat the oven to 200C/180C fan/gas 6. Heat the olive oil in a large ovenproof frying pan over a medium heat and fry 1 onion, 150 g of chorizo and peppers along with a pinch of salt and pepper for 15 mins until the veg has softened and the chorizo has released its oils. Add the paprika and 4 garlics, and cook for another few minutes until fragrant.

Tip in the chopped tomatoes, olives and 400 g of butter beans, stir to combine and season. Nestle in 8 chicken thighs and season well. Transfer to the oven and bake for 40 mins until the chicken skin is crisp and the meat cooked through and tender. Scatter with 1 Handfull parsley and serve. Watch after ad (0.04): 3 Budget Egg Ideas
