
Thai chicken cakes with sweet chilli sauce
A Thai chicken dish made with chicken breast, ginger, coriander and green chilli.
Ingredients

- 4Onion1 chopped
- 5Coriander4 tbsp
- 6Green Chilli1 chopped
- 7Olive oil2 tblsp
- 8sweet chilli sauceTo serve
- 9LimeTo serve
- 10Spring OnionsChopped

Method

step 1 Toss the chicken, 1 garlic, 1 ginger, 1 chopped onion, 4 tbsp of coriander and chilli into a food processor and season well. Blitz until the chicken is finely ground and everything is well mixed. Use your hands to shape six small cakes.

Heat the oil in a frying pan, then fry the cakes over a medium heat for about 6-8 mins, turning once. Serve hot, with To serve sweet chilli sauce, To serve lime wedges, coriander, shredded spring onion and Chopped red chilli.
