
Chorizo baked eggs
Spicy chorizo, jammy tomatoes, and baked eggs — brunch in one pan.
Ingredients

- 2Cherry tomatoes200 g
- 3Onion1 piece
- 4Eggs4 piece
- 5Olive oil1 tbsp
Method
- 1
Crisp 150 g of chorizo in an oven-safe skillet with 1 tbsp of olive oil.

Add 200 g of cherry tomatoes and 1 onion; cook until the tomatoes soften, about 5 minutes.

Make wells and crack in 4 eggs; bake until the whites are set and yolks are to your liking.
