
Mushroom risotto
Creamy arborio rice with mushrooms, wine, and parmesan — stir, sip, repeat.
Ingredients

- 2Button mushrooms250 g
- 3White wine150 ml
- 4Onion1 piece
- 5Parmesan cheese60 g
- 6Butter40 g
- 7Olive oil2 tbsp
Method

In a wide pan, soften 1 onion in 2 tbsp of olive oil.

Add 300 g of arborio rice and toast 1 minute; pour in 150 ml of white wine and stir until absorbed.

Gradually add hot stock or water, stirring often, until the rice is creamy. Fold in 250 g of button mushrooms, 60 g of parmesan cheese, and 40 g of butter.
